

These easy-to-make cookie bars is one of my all time favorite recipes. It’s basically one big chocolate chip cookies. It’s time-saving and really easy to make, but also super delicious. These cookie bars have a chrunchy top layer and a center that is soft, chewy. buttery and filled with lots of chocolate. It’s sooooo good!


Ingredients
225 g butter
160 g light brown sugar
180 g granulated sugar
1 tsp vanilla paste/vanilla extract
1 whole egg
1 egg yolk
300 g all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
200 g chocolate, roughly chopped (I like to mix milk chocolate and dark chocolate)
Topping:
Daim candy bars
Chocolate chips or chopped chocolate
Flakesalt
Instructions:
- Set the oven to 175°C and line a tray (35×25) with baking paper.
- Melt the butter in a pot over medium heat. Remove from the heat and let cool slightly.
- Add the melted butter in a bowl and add the light brown sugar, granulated sugar and vanilla. Whisk until combined.
- Add 1 egg + 1 egg yolk and whisk until combined.
- Mix the dry ingredients in a separate bowl, then sift into the butter mixture. Mix until all the flour is almost fully incorporated, then add the chopped chocolate. Continue mixing until fully combined.
- Pour the dough into the pan. Spread out the odugh evenly by using a spatula.
- Bake in the middle of the oven for about 20-23 minutes. In the meantime, chop the daim candy bars and the chocolate (or use chocolate chips).
- As soon as the cookie comes out of the oven you top it with daim and chocolate. Sprinkle some flake salt as well.
- Allow to cool completely at room temperature before cutting the cake into squares. Store the cookies in an airtight container at room temperature.
